Tasty Fried Rice Recipe (Serves 4) Ingredients: 3 cups cooked rice (preferably a day old for best texture) 2 tablespoons vegetable oil or butter 1 cup mixed vegetables (carrots, peas, sweetcorn, green beans, etc.) 1/2 cup diced onions 1/2 cup chopped spring onions (optional) 2 eggs (beaten) 1 cup cooked and diced chicken, shrimp, or beef (optional) 2–3 tablespoons soy sauce 1 teaspoon curry powder 1 seasoning cube (Maggi or Knorr) Salt and pepper to taste
Steps:
Prep the Rice: If using freshly cooked rice, spread it on a tray and let it cool so it doesn’t become soggy.
Scramble the Eggs: Heat 1 tablespoon oil in a large pan or wok. Pour in the beaten eggs and scramble quickly. Remove and set aside.

Sauté Vegetables: In the same pan, add another tablespoon of oil. Add onions and stir-fry until soft. Add mixed vegetables and stir-fry for 2–3 minutes.

Season the Mix: Add soy sauce, curry powder, seasoning cube, salt, and pepper. Stir well to combine everything evenly.

Final Touch: Stir in spring onions for extra flavor and color (optional). Taste and adjust seasoning if needed.
